VITICULTURE
Worked soils; no chemical fertilizers; ripe, healthy grape clusters (simple guyot pruning, suckering, thinning, de-leafing, etc.).
Selection of ripe, non-botrytised grape clusters for a dry white wine style

VINIFICATION & AGEING
The grapes are transferred directly in a pneumatic press.
After the settling period, alcoholic fermentation takes place in 230-litre Burgundy barrels.
No thermoregulation, no additives.
Ageing: Alcoholic fermentation in barrels (several weeks); no malolactic fermentation.
The wine stays 18 months in barrels with some stirring of the lees (bâtonnage) depending on the vintage to create a fat wine.
Residual sugars and alcohol: < 2 g/L and > 13% ABV
TASTING
Yellow colour with green reflections; complex nose with white exotic fruits (lychee, carambola) and some mineral notes.
Palate is structured, long and fresh, with tart notes of lemon
STORAGE
Conservation: Chenin is known for its long storage time (15 years and more) but most people cannot wait to enjoy its noble aromas
FOOD AND WINE PAIRING
Serve not too cold (10-12 °C) with grilled fish, white meat, hard cheese or fermented cheese, or simply as
aperitif.
