TERROIR
Early, Middle and Late Turonian clay limestone.
VITICULTURE
Worked soils; no chemical fertilizers; different plot exposure and orientation allow for balanced, mature grapes.
Selection of ripe, non-botrytised grape clusters for a dry white wine style, taut and mineral
VINIFICATION & AGEING
Direct pressing; after the settling period, alcoholic fermentation takes place in small, unlined cement tanks of different capacities according to plot origin.
No thermoregulation, no additives.
Ageing in tanks (several weeks); no malolactic fermentation.
The wine stays 6 to 9 months in the tanks, some stirring of the lees (bâtonnage).
Blending and bottling in the spring after the harvest.
Residual sugars and alcohol: < 2 g/L and > 12% ABV
STORAGE
Conservation: Drink within 5 to 10 years
TASTING
Pale gold colour; nose with white fruits: citrus (lemon), peach, lychee, white flowers (hawthorn); the supple, expressive palate follows the nose and has some body, refreshing, with a lemon finish

Serve cool (8 - 10 °C) with shellfish, fish in sauce or vegetable dishes
